The Ultimate Potato Salad!

This isn’t your average potato salad - it’s a next-level version that brings together crispy golden roast potatoes, creamy tangy dressing, and loads of flavour in every bite. Khalil made this for us and we absolutely loved it, I had to recreate it and share it with you all! 

Khalil’s potato salad recipe

Ingredients:
4 x 500g packs Woolworths Parmesan Crumbed Potatoes with Garlic Butter (they’re par-boiled)
Olive oil (for roasting + mixing)
Salt & pepper, to taste
2 tsp smoked paprika
1 tbsp garlic dip
1 tbsp seeded wholegrain mustard
1 jar creamy potato salad dressing
1 tbsp mayonnaise
Handful chopped fresh dill
Handful grated Parmesan cheese

Method:
1. Roast the potatoes:
Cut the par-boiled potatoes into quarters, drizzle with olive oil, and roast in a preheated oven at 200°C for about 1 hour, until golden and crispy.
2. Cool them down:
Let the potatoes cool completely – this is key so they don’t soak up too much dressing or go mushy.
3. Add the flavour:
Once cooled, place the potatoes in a large bowl. Drizzle with a little more olive oil, then add salt, pepper, smoked paprika, garlic dip, mustard, mayo, the whole jar of potato salad dressing, chopped dill, and Parmesan. Gently mix everything together until coated.
4. Enjoy!
